Local restaurants in Louisiana have not been able to serve crawfish because there were shortages. A restaurant in Haughton usually opens around Dec. 1, but has just opened because previously there weren’t any crawfish, due to drought and saltwater intrusions. Prices for the mudbugs were much higher than in past seasons.
